Nobu by the Beach
Nobu by the Beach is an eagerly awaited hot spot at Atlantis The Royal and a new opening from Chef Nobu Matsuhisa. The Nobu beach club is a combination of modern cool luxury and Japanese traditions that look to exemplify pool and beach club experiences.
Chef Damien Duviau, it is full of traditional Japanese and Peruvian Cuisine with a twist, with highlights including bento boxes, sandos and bitesize black cod and tacos. For those dining at the restaurant can also enjoy a live Robatayaki counter, literally translating to ‘fireside cooking’, featuring a fresh fish and meat display, as well as charcoal grilled skewers. To complement the selection of dishes, Nobu by the Beach has a curated cocktail programme that too takes inspirations from traditional Japanese and Peruvian cuisine. Innovative and reinventive are the words for this brilliant cocktail programme.
There are also stunning views of the Dubai Skyline with a feature lagoon pool, a Nobu restaurant and expansive outdoor bar and terrace overlooking the ocean. To add to the ambience, there will be live music from a DJ playing a house soundtrack and more. Whether you’re lounging on a day bed or visiting one of Nobu’s luxury air-conditioned cabanas, of which two has their own private plunge views, you’ll be treated to a huge variety of amenities from Nobu popsicles, mochi ice cream, ultrasonic jewellery, sunglasses cleaning and more. For delectable Pan Asian cuisine from Tao Group Hospitality and Hakkasan’s sister restaurant, Ling Ling is an experience like never before – drink, dine and dance away. Ling Ling boasts a dining room, an ultra-lounge club and outdoor terraces which provide unparalleled 180-degree views of The Palm, Arabian Sea and Dubai’s skyline. From taste to design, everything has been carefully crafted to ensure you have the most unforgettable experiences and feel fully immersed in the Ling Ling experience.
For those who are after a vegan dining experience in a sophisticated setting, look no further than Ling Ling, Dubai’s newest and most stylish dining and nightlife experience. Through its dedicated vegan offerings packed with innovative plant-based contemporary Asian dishes, guests will be spoilt for choice. For appetisers, diners can choose from an array of hot dishes, dim sum, salads, temaki as well as king oyster mushroom and asparagus skewer cooked on a traditional robata grill. With a choice of three vegan main dishes, such as Truffle XO hand cut noodles with hon shimeji, okra and eggplant; Singaporean vegetable fried rice with curry, crispy rice cracker, and coal-roasted cauliflower with green curry and crispy shallot, diners can enjoy a range of exotic flavours.

Dinner by Heston Blumenthal
Michelin-star Chef Heston Blumenthal’s Diner will take you on an ultimate historical British culinary experience. Explore the delights of Medieval Britain with a selection of Heston’s signature dishes. Definitely look out for Meat Fruit, a playful mandarin and chicken liver parfait, and the Tipsy Cake, a spit roast pineapple dessert, which are internationally known and loved.
Dinner boasts a private dining room inspired by 16th century Tudor architecture with plush chairs and sapele and rosewood tables. Though the colour scheme may seem dark, wooden tones add warmth and the pops of colour bring a liveliness to the restaurant, creating a warm and inviting ambience.

Milos
Estiatorio Milos by acclaimed Chef Costas Spiliadis brings the finest Mediterranean cuisine to Atlantis The Royal. With simplicity as its core, guests are treated to dishes made with only the finest and freshest ingredients, made with care and precision to preserve their natural flavour. You won’t find lobster thermidor or a list of fish sauces here. The top two dishes in Dubai were enjoyed here and they were unlikely candidates – A beautiful feta salad and the freshest Carabinero prawns. Tasting the natural juices of these special Carabineros was like having a whole Bouillabaisse. Incredible flavour.
There are a wide range of dishes to explore and entice your tastebuds with, from Greek wild oysters to ceviche’s and tzatziki that are brushed with Aegean rock salt or a drizzle of olive oil from centuries old Koroneiki olive trees. The richness and fresh tastes of each dish will most certainly leave you wanting more. Estiatorio Milos fully embodies the sea, land and the earth and respectfully invents new and traditional flavourful dishes.

La Mar by Gaston Acurio
For those looking to take a dip into some South American cuisine, La Mar by Gaston Acurio is the place.
Gaston Acurio began his culinary career in 1989 in Madrid and Paris and graduated from Le Cordon Bleu. in 1994 he opened his first restaurant Astrid&Gastón in Lima and eventually in Chile, Colombia, Mexico, and Spain. Since, his career has only flourished with the creation of his own restaurants and the expansion of several other brands, such as La Mar, Tanta, Panchita, Chicha to name a few.
At Atlantis The Royal, enjoy the diverse flavours of Peruvian cuisine that incorporate traditional and new original twists. La Mar’s menu includes upscale Sabores Autenticos that include sashimi style tiraditos, classic Peruvian causas potato dumplings, and even freshly grilled anticucho street food style favourites. Jaleo by Jose Andres
Jaleo Dubai by Chef Jose Andres beautifully creates diverse regional dishes of Spain which include many of his own favourite childhood Spanish dishes. Ariana’s Persian Kitchen
Ariana Bundy, an award-winning TV chef and cookbook author is set to debut her first restaurant at Atlantis The Royal with Ariana’s Persian Kitchen, which looks to serve contemporary innovative Persian Cuisine. A female-led concept, Ariana’s Persian Kitchen tastefully blends fruits, nuts and floral fragrances with meats, grains and vegetables, capturing the flavours and aromas found in a traditional Persian home. Ariana’s Persian Kitchen is full of generational family recipes that showcase the finest of Persian cuisine.
If you aren’t so sure about what Persian Cuisine is, it is historically rich and has influences from its neighbouring regions, some being Levantine Greek, Turkish and Russian cuisine. However, what really makes it Persian is the use of saffron and rose water which along with a variety of fruits such as plums, pomegranates, prunes and more with an array of meats, is sure to leave you in awe and wanting to try more.
