In Kensington, The Stables Bar at The Milestone Hotel has quietly reopened—refined but characterful, its 19th-century stable origins still present beneath dark woods, low lighting, and a sharp sense of calm. Throughout June, the bar is partnering with Desi Daru, a rising British vodka brand with Indian provenance, resulting in a limited-edition martini menu that’s both bespoke and beautifully restrained. It’s confident, considered, and quietly exceptional—exactly what a martini in Kensington should be. The martini menu runs until 30th June. No reservations are required for the bar, but don’t be surprised if the corner booths become harder to claim as word spreads.

A Setting Embedded with Memories
Walk into The Stables Bar and you’re immediately met with an atmosphere of a layered, deliberate, and unmistakably intimate setting. Everything is wrapped in deep, tactile textures, dark green leather banquettes with buttoned backs, dark-stained wood walls, soft lamplight catching the brass trim of bar stools and small tables.
Set within The Milestone Hotel & Residences, a Grade II listed building with over 300 years of history makes the bar a carrier of the quiet confidence of a space shaped by time.
The equestrian artwork on the walls, the glint of cut glass behind the bar, the quiet weight of polished stone under your drink all speak to a very specific kind of luxury, one that is embedded in memories and history. Nothing about the room feels staged. It feels inherited while displaying the kind of atmosphere that makes a martini feel not just appropriate, but essential.

Three Martinis, One Purpose
This one-off menu, available throughout June 2025, is the product of a collaboration between Desi Daru and the bar team at The Stables—three martinis, each designed with intent rather than embellishment. Desi Daru’s vodka, distilled in the UK using Indian ingredients and filtered seven times, brings a clean, structured base to each serve which is proof that when the spirit is right, the drink doesn’t need dressing up.
The Martini + Caviar is the purist’s pick as it is served with dry vermouth, a twist or olive, and a caviar bump from Exmouth Caviar Company. It’s cold, sharp, and just indulgent enough for those who believe simplicity, done well, is luxury in itself. The Signature Martini adds cardamom bitters, warming the vodka with a quietly spiced finish. It’s the choice for someone who enjoys subtlety with backbone and nuance. Then there’s the Tropical Martini: mango vodka, fig leaf vermouth, and a few drops of chilli oil. Unexpected, layered, and somehow perfectly in tune. It is perfect for the curious drinker who’s tired of ‘safe,’ it’s a welcome surprise that still respects the structure of the classic.

A Collaboration Rooted in Craft
There’s a quiet synchronicity between Desi Daru and The Stables—a shared respect for restraint, detail, and the power of letting good ingredients speak. The martinis are deliberately served built on understanding the spirit itself. Bar Manager and bar legend Angelo Lo Greco is a staple at The Milestone and his vision for the bar is inspiring. He is knowledgeable, kind and so very passionate about the bar world and also all things agave. The menu doesn’t chase trends; it honours the classic without treating it as untouchable. Each serve offers something precise, with enough personality to stand apart.

Angelo Lo Greco
A Living Legacy of Hospitality
What truly defines The Milestone isn’t just its address or heritage, it’s the people who’ve shaped it over time. Many of the team have been with the hotel for decades, creating a culture of service that feels instinctive. This is a place where guests aren’t simply welcomed, they’re remembered, anticipated, and genuinely looked after. That same legacy lives on at The Stables Bar, where Resident Bar Manager Angelo Lo Greco brings a creative edge to classic mixology, and Executive Chef Daniel Putz curates an elevated bar menu to match. Whether it’s a spontaneous martini at the bar or an evening in The Hideaway’s candlelit elegance, every detail here carries the quiet confidence of a place that’s been doing things properly for generations.

A Moment Worth Savouring
The Desi Daru martini menu isn’t just a celebration of a cocktail—it’s a reflection of everything The Stables does well, precision, atmosphere, and quiet self-assurance. In a city obsessed with reinvention, this is a collaboration that knows exactly when to hold back. It offers a rare kind of luxury, the kind that doesn’t announce itself, but leaves an impression long after the last sip.
