The heart of INCA’s “Miami Nights” beats stronger with the bold collaboration between the luxury dining brand and Don Julio Tequila, one of the most iconic names in premium spirits. This partnership isn’t just about crafting cocktails; it’s about celebrating heritage, craftsmanship, and an elevated sense of Latin culture.
Founded in 1942, Don Julio’s story began with a vision for excellence and a deep-rooted tradition. Don Julio González, its namesake, transformed tequila by aging tequila longer, harvesting agave at peak ripeness, and setting a new benchmark for the spirit, thus prioritising quality over quantity. This is the commitment to artistry that aligns perfectly with INCA, where no detail is too small in pursuing atmosphere and flavour.
Now, join the memorable journey of the heart of Miami, Little Havana being brought to Soho, as INCA invites you to a promising nightlife through an explosive lineup of entertainment. Think dazzling costumes, pulse-raising reggaeton, house, and classic Miami club beats. Each evening promises a sensory escape unlike anything else in the city.
And of course, it doesn’t stop there.

Burst of Latin American Flavours
INCA prides itself on extending on cultural diversity, to which the star of the show this time is the Trio De Ceviche, presenting bluefin tuna with rocoto chilli and tiger’s milk, yellowtail with aji amarillo, and salmon with tiger’s milk. These dishes are sourced carefully and freshly, aiming to transport guests to an explosion of colours, aromas and flavours.
Not a fan of seafood? Indulgent alternatives include the Charcoal Grilled Lobster Tail, prepared with chupe-style risotto, edamame beans, roquito chilli and pea shoot herbs, or the T-Bone ‘El Fuego’, which is adorned with chimichurri sauce, aji amarillo, pardrón peppers and lemon. A true carnivore’s delight.

To pair with such flavours, the cocktail menu made with Don Julio Tequila blends its original luxury tequila with various mixers. Take the Blanco Heat, priced at £22 for example. It consists of Don Julio Blanco, orange, Aperol and Ambrato vermouth, rimmied with Tajín, making it a bright, zesty cocktail with just the right spice to it. Or the Neon Paloma (£26), which has Don Julio Reposado, pomegranate syrup, grapefruit and soda. It puts together a ripe fizzy alternative on Miami’s favourite. Other drinks include the Ocean Drive Rosado (£45), made up of Don Julio Rosado, mint and lime soda, aged in Ruby Port wine casks, forming a light, elegant taste, and a more refined edge. Elevating the experience further is the Caliente (£70), a luxurious experience with Don Julio 1942, which has warming spices infused with it, executing a bold, rich, and fiery cocktail.

Finally, for a sweet finish, INCA’s Choco Coco incorporates Don Julio 1942 into the mango gel, pairing it with fresh coconut, lime sorbet, and coconut mousse. It is designed to be a refreshing and silky dessert. Light and creamy, it’s the exclamation point on an unforgettable evening.
