Borough Yards in London will host Laphroaig Market, a collaboration between Laphroaig Single Malt Scotch Whisky and Michelin-starred chef Tom Aikens. This rather special one off market is open from 21-23 April 2023 and will feature London’s unique culinary pioneers and celebrate with exceptional produce, gourmet dishes, and expertly crafted Laphroaig cocktails.

Tom Aikens
Tom opened his own restaurant, Tom Aikens, which won a Michelin star in its first year, followed by another star and 5AA Rosettes in 2008. He now owns and directs the Michelin-starred restaurant Muse in Belgravia. Tom has also made a global name for himself by opening Pots, Pans, and Boards in Dubai, three separate eateries in Abu Dhabi, and most recently, The Jade Room + Garden Terrace at The Tokyo Edition in August 2022. He has also dived into the publication industry, writing three cookbooks and appearing on culinary TV programmes.
Laphroaig Single Malt Scotch Whisky
Laphroaig, pronounced La-froyg, and means “the beautiful hollow by the broad bay.” For over 200 years, Laphroaig has been a leader in the whisky industry for over 200 years. The brand originated on Islay island, abundant with blue peat smoke and ocean salt. Their single malt scotch whisky has a distinct taste and story with each individual bottle, as Laphroaig’s distillery is one of the few that still uses traditional malting floors and dries and infuses its own malt with the thick blue smoke from old peat-fired kilns.

The Market at Borough Yards
On the Thames’ south bank, next to Borough Market, Borough Yards is a two-minute walk from London Bridge station and just 10 minutes from London’s financial district, Shakespeare’s Globe, Tate Modern, and much more. Inspired by Laphroaig’s island home, Islay, Tom Aikens will prepare six dishes emphasizing salt, fire, and peat flavours, which are the three elements that make the Laphroaig taste so unique. The market will also feature food producers, such as the family-run greengrocer Turnips, established in London for over 30 years.
Tickets will be available from £25 for access to the market for three days, a sample of one of the six dishes and a Laphroaig cocktail. Guests will also have the opportunity to handpick market ingredients to then take them to be cooked over an open fire in front of their eyes by Tom and his team.
The dishes include a lobster roll with sudachi, spiced mayo, nori, fried cabbage, and cicely; a steak ribeye with 10-year-old Laphroaig shallot sauce, grilled onion and pink purslane; and a cold smoked and charred cabbage with fermented grains and gremolata. Bespoke cocktails will be served to complement each dish, crafted with Laphroaig and bringing signature flavours of salt, fire, and peat to the forefront.
