The acclaimed Artesian Bar has unveiled Ultimo, the concluding chapter in its ambitious Futureproof Trilogy. This third and final volume brings together bold and modern mixology and culinary brilliance. With a visionary cocktail list and an exclusive new menu of elevated bar snacks created by Chet Sharma, the acclaimed chef patron of BiBi, Artesian keeps delivering and ensuring that it remains one of the very best bars in London.
Futureproof Trilogy is rooted in sustainability and innovation, something that Artesian has been doing for many years. Ask industry insiders to name the bars that really put mixology on the map in London and Artesian will be at the top of that list. This menu challenges traditional expectations with bold and extraordinary flavour combinations. It reimagines unconventional ingredients into refined and unexpected drinks.
Where tradition meets technology, each drink is created with locally sourced, futureproof ingredients. These ingredients are imaginative, purposeful and also and very importantly accessible. The creations make sense to a cocktail beginner through to the most experienced cocktail aficionado who wants to explore.

Ultimo – The last chapter of unexpected mixology at Artesian Bar
Following the innovative and successful Volumes I and II, Ultimo Artesian Bar is a selection of 16 meticulously crafted cocktails. Each drink is centred around a single ingredient. Expert techniques and other flavours contribute to building a layered and sophisticated drink and shining the spotlight on the key element.

Apple – a Champagne cocktail twist capturing the nostalgic essence of apple crumble. It blends crisp and sweet and results in a refreshing sensation with each sip. It is the perfect drink for a sunny summer afternoon.
Cep – a unique reimagination of a Negroni with a hint of blue cheese, this is the drink for those looking for a more herbacious Negroni style edge. With Asterley Bros Estate Vermouth, Sherry, and Cep Mushrooms, it is a surprising yet deliciously balanced cocktail with a balanced strength and delicate flavour.

Wild Strawberry – think a lychee Martini but with sweet strawberries and refreshing mint instead. This cocktail is a vibrant and fruity drink that blends Ketel One, Mancino Rosso, Acqua Bianca, Aperol, and, of course, Wild Strawberries.
Hawthorn Berry – bittersweet with a citrusy kick. The Garibaldi variant brings together Campari, Olmeca Altos Plata, Grand Marnier, L’Aperitivo Nonino, and both Hawthorn Berries and pickled hawthorn.

Parsnip – inspired by the classic Espresso Martini yet with a twist of parsnip. It results in a savoury taste that is surprising, fun, and sophisticated.
Yet, the list does not end there. For those more daring and ready to experiment with the wonders of refined mixology, there are also cocktails that bend the line between drink and dish.
Walnut – with earthy elegance, it blends Woodford Reserve Rye, Grand Marnier, mung beans, sherry and burdock, resulting in a surprising and exquisite cocktail.
Pizza – a playful, fun drink that balances marine botanicals, raspberries, basil, lemon, and soya into a surprisingly fresh and delicious alternative.
Each cocktail is crafted to surprise and delight, reinforcing Artesian’s reputation as one of London’s most inventive drinking destinations.

Chet Sharma’s Cuisine
To enhance the experience, Chet Sharma has curated a selection of bar bites that match each of the drinks. With his modern Indian cuisine at BiBi mixed with English flavours, he delivers a menu with meticulous precision and creative design. Ok these are next-level bar plates worthy of Michelin star status.
Chet offers a unique take on bar bites that create unforgettable experiences. He has always had a deep appreciation for the craft behind high-end mixology and understands, admires, and takes part in the shared spirit between the bar and the kitchen. He showcases modern Indian cuisine in an entirely new context, creating iconic and unique dishes.

Kasoori Methi Chicken Pakora – following the Kasoori method, the chicken is marinated with dried fenugreek leaves before being fried and served with a yellow chilli emulsion. The sauce adds depth and bright acidity to the dish that balances the richness of the chicken pakora.
Lamb Keema Kulcha with Pickled Chilli Butter – stuffed bread with spiced lamb shoulder and chilli butter to add to the flavour, this dish is a delicious complement with a comforting yet surprising flavour bomb.
Stilton Malai Kofta with Mango Chutney – an innovative plate that offers a crisp fried blue cheese croquette, paired with a sweet and spiced mango chutney. A savoury and sharp option that results in a wonderful mix of expected and unexpected pleasures.
Each dish complements the cocktail selection while reflecting Sharma’s signature approach to blending tradition with innovation.
