The Vesper Bar at The Dorchester has launched Eterna — a new cocktail menu drawing inspiration from the Golden Ratio and the Fibonacci Sequence, mathematical concepts often seen in nature, art and architecture. Through Eterna, Vesper Bar transforms the balance and evolution of the Golden Ratio into a cocktail journey that reflects its intricate complexity and consonance. Whether you are into poetic and precise experiences of flavour guided by nature’s most harmonious pattern or not, this menu is gorgeous.

Designed by acclaimed Bar Manager Lucia Montanelli and structured around the Fibonacci numbers 3, 5, and 8, the menu mirrors the classical spiral found in sunflowers, seashells and art. Each page of the menu is not only organised by flavour profile but also visually anchored in a symbol of the Golden Ratio, such as the nautilus shell or Botticelli’s The Birth of Venus.

The Timeless section of the Vesper Bar Eterna menu features three exquisitely crafted classic cocktails, each showcasing the elegance and balance of the Golden Ratio through minimalist elements. Inspired by the infinite spiral of the nautilus shell — a natural symbol of perfect geometry — these drinks capture the essence of timeless sophistication and endurance.
Martinez – includes Dorchester Old Tom gin, Cocchi Vermouth di Torino, Maraschino Perla Dry and The Dorchester Boker’s Bitters. A cocktail that blends tradition with a modern twist that highlights botanicals and balanced sweetness.
Vesper – a signature drink made of a mix of Stolichnaya Elit, Dorchester Old Tom, Del Duque 30 sherry and re-distilled Forbidden Fruit, offering an intricate yet precise cocktail. This beautiful cocktail was created when The Vesper relaunched.
The Dorchester of London – combines Boatyard Double gin, Doorly’s 3-year rum, Forbidden Fruit liqueur, pink grapefruit, rhubarb and lavender. This elegant blend of citrus, florals, and subtle tropical hints offers complexity with elegance — an iconic cocktail in every sense of the word that goes back a long time carried forward by legendary bar managers, including Giuliano Morandin who spent 40 years at The Dorchester.

The Savoury collection of cocktails in the Vesper Bar Eterna menu is where tangy sophistication meets earthy complexity, resulting in clean, refreshing and umami-rich flavours. Influenced by the elegant salinity of natural elements and flinty waters, each sip carries a subtle depth, layered with soft sweetness and organic undertones. Anchoring this section is a visual representation of Botticelli’s The Birth of Venus, where the Golden Ratio defines both beauty and balance.
Venus Observed – blends coconut pisco, Seatrus gin, Italicus, and tomato & caper berry to create a cocktail that’s as elegant as it is presently surprising.
Matrameru – a mix of Jack Daniel’s Single Barrel, Savoia Orancio, banana oxymel, and Kaveri ginger. It’s a bold, savoury cocktail with warmth, spice, and subtle sweetness that balances stability and adventure.
The Look of Love – combines Boatyard Double gin, sesame Campari, Cocchi Dopo Teatro, and roasted aubergine. This cocktail explores deep umami and creates a rich, savoury taste with remarkable complexity. The aubergine really comes through beautifully.

The Herbaceous section honours the harmony between nature’s wilderness, drawing inspiration from the elegant geometry of the Romanesco cauliflower — a natural fractal where each bud unfolds in Golden Ratio perfection. These cocktails reflect intricate symmetry, combining herbs, roots and botanicals into bittersweet, earthy tastes that feel like a garden stroll at dusk.
Sacred Garden – blends Doorly’s rum, tamarillo & basil, cedar, and absinthe to create a cocktail that balances earthy spice with aromatic aftertaste.

Abaci Moss – a daring option featuring Kay sake, spiced mezcal, Palo Cortado sherry, and tarragon bubbles. It’s a smoky-herbal fusion of savoury intensity with unexpected botanical flavours.
Green Knight – a mix of Altamura vodka, mastiha, feta, gentian and watermelon bubbles resulting in a bold, textured drink that’s both creamy and refreshing.

The Creamy portion is heaven for a sweet-toothed dessert lover; a blend of texture and indulgence, offering velvety cocktails that draw from flavours like vanilla, chocolate, caramel and toasted nuts. These drinks are buttery, bold and intricately spiced — a cosy experience with a touch of elegance.
Kanagawa – combines Glenmorangie 12, sandalwood white port, peach yoghurt and fig leaf soda to create a delicate balance of fruit, wood, and cream.
Spindrift – a luxurious offering, blending cherry whey, Courvoisier, Woodford Reserve rye, Moscato and fenugreek to deliver a silky, spiced mix with nutty, aromatic undertones.
Whitecap – mixes Cadello, Cocchi Americano, moka, guanabana and saffron crème fraîche. This cocktail is exotic, fragrant, and unique, with floral warmth and gentle bitterness.

The Floral & Fruity segment captures the bright, vivid feel of a sunlit garden in bloom. These cocktails are subtle yet vibrant, filled with floral notes, tropical sweetness and fragrant finishes. Each is inspired by the elegant spiral design of a sunflower head as it attempts to optimise light exposure.
Eve’s Apple – a blend of Flor de Caña 12-year rum, marzipan, fermented apple and fino sherry. Both rich and aromatic, it balances fruit and nuttiness with refreshing acidity.
Phidias Fig – deep, rich tones with The Dalmore 12, Amaro Santoni, fig and palo santo. A layered drink both earthy and aromatic with a sweet edge.
Black Pearl – features Everleaf Mountain, lychee, rooibos, forbidden molasses and tropical champagne. It is an exotic cocktail that results in a floral lightness and rich intricacy.

The Smoky & Earthy section of the Vesper Bar Eterna menu channels elegance and the raw power of storm clouds — swirling, it follows the Fibonacci sequence. These cocktails blend smoke, spice, herbs, and rich vegetal tones into bold, complex drinks that linger with intensity.
Convocation – an intriguing mix of beetroot Old Tom gin, Cascara Savoia, rhubarb and marshmallow. As the beetroot grounds the drink, the marshmallow lends a soft, unexpected finish.
Twister – a sharp and herbal drink that blends mezcal, brassica, jasmine and botanical vinegar, resulting in a smoky and fragrant cocktail that twists.
Thunderball – a blend of Enemigo Blanco tequila, smoky EVO, pineapple and sage Sauvignon Blanc. It is bold and tropical, delivering a lively and elegant drink.

Last but certainly not least, the Non-Alcoholic collection proves that complexity and craft are not limited to alcoholic beverages. Making reference to architectural landmarks, from the Taj Mahal to the Guggenheim, these drinks deliver herbal and fruity tastes that are vibrant and full of layers.
East of Eden – pairs Everleaf Mountain with peach, sandalwood and fig leaf soda. It is both soft and rounded with a balance of sweetness, woodiness, and a hint of natural freshness.
