Giuseppe Parisi, the new Executive Chef at Al Mare, Carlton Tower Jumeriah has just launched his new menu. His experience shines in the art of traditional Italian cuisine. Parisi said, “The chaotic city bathed in sun, the crystalline water, Mount Vesuvius, and the wide, embracing arms of The Bay of Naples. I fell in love with the art of traditional Italian cooking and would often assist with preparing the meals for loved ones at gatherings.”

Giuseppe Parisi worked at The Lanesborough’s Michelin-starred Apsleys Restaurant under Chef Heinz Beck, after learning his culinary abilities at hospitality school. He was born and raised in Napoli, Italy and takes inspiration from the Mediterranean and city. Giuseppe developed his passion for cooking from his mother who taught him the intricacies of perfecting fish, meat, and vegetable dishes in addition to a range of sweet treats and cakes which were passed down through generations of his family.
The double Michelin-starred L’Olivo Restaurant at Capri Palace Jumeirah is just one of the Michelin-starred restaurants Giuseppe previously worked for. He considers Chef Salvatore Elefante to be one of his closest mentors. Parisi prided himself on local ingredients of fresh fish to native sweet tomatoes as a chef in Capri. At The Carlton Tower Jumeirah, he will showcase his love for the Bay of Naples in his work in the heart of Knightsbridge.

Ideas and Inspiration
Creating a number one destination for global travellers and Londoners alike, Parisi will be curating the food and beverage aspect at Al Mare, The Chinoiserie and in the room dining. He has innovations to focus on the finest ingredients and fresh produce. The drinks list has had a makeover too with some notable new cocktails including a lobster infused Belvedere vodka martini and a Manhattan Ristretto made with Lagavulin 2006.

The Al Mare Dining Experience
A variety of Italian and seafood menus are offered for guests to experience from a Tasting Menu, including a Tartare di Tonno consisting of Mediterranean bluefin tuna, avocado, green apple, yogurt and Oscietra caviar. Other new dishes include a Tagliolini al limone con Gamberi Rossi, Eliche ai Frutti di Mare & Pesci di Scoglio and a Branzino. Our favourite was a new been tartare with layers of tomato and a clever vegan basil mayonnaise.
A La Carte dining is available for guests as well, including tastings of Antipasti, Pasta, Pesce, Carne, and Contorini. Guests can expect an open air dining atmosphere similar to taking a trip to the Italian coast, with a neutral and pastel colouring dining room and serene natural light.
Diners can end the night with a decadent dessert menu, featuring Semifreddo alla Liquirizia, a liquorice semifreddo with white chocolate cream and pistachio Sacher slice. Other options include Cioccolato e Frutto della Passione, Babà al Rhum, and of course a traditional tiramisu.
