Since opening in March, Maya Manchester has quickly become a standout destination in one of the neighbourhood’s most vibrant neighbourhoods. Situated along Canal Street in a beautifully restored 20th-century warehouse, this three-floor venue has already earned a place in the Michelin Guide, and it’s easy to see why. More than just a restaurant, Maya is an immersive experience designed to fill your evening from start to finish. Each floor offers a distinct vibe, from elegant dining to late-night revelry, encouraging you to slow down and savour not just the food, but the atmosphere and energy of the space.
Whether you’re here for the seasonal dishes or to sip cocktails at the plush bar, Maya’s allure extends beyond what’s on the plate. It’s a place for those seeking not just a meal, but a full evening experience.

The Vibe and Interiors – A Layered Affair
From the moment you enter Maya’s ground-floor brasserie, it’s clear that this is a place with intention. The vibe is warm yet opulent. Brick walls offset by plush velvet furnishings invite you to settle in and stay awhile. The cocktail bar is a centrepiece, and it’s no wonder—this part of Manchester is known for its lively party scene, and Maya’s bar strikes the perfect balance of lively energy and elegance. It’s the kind of place where a Champagne margarita feels perfectly at home. Speaking of which, our Champagne Margarita was a knockout: a blend of light effervescence and bright citrus with just the right amount of tequila punch. A drink that sparkles in more ways than one, it’s both celebratory and incredibly thirst-quenching.

Downstairs, the main dining room offers a more intimate atmosphere, its gold and navy palette shimmering under the soft lighting, almost art deco in its approach. The elegant surroundings lend an air of formality, but the restaurant manages to maintain a welcoming feel. This space is where you’ll be treated to an ingredient-driven menu that regularly changes, with a hyper-seasonal focus.

And further still, beneath the dining room, lies The Pump Room, a late-night bar where photography is forbidden—adding a clandestine, almost speakeasy feel. This is the final layer of Maya, where you can lose yourself to the night, swaying to music until the small hours. It’s an all-night affair here, as you move from dinner to drinks to dancing. If the night’s still young—or you’ve come from further afield—Leven Hotel, just steps from Maya, is your ideal retreat. Think exposed brick, vintage furniture, and floor-to-ceiling windows; a blend of old-world charm and modern elegance.

The Food – Elegance on a Plate
Maya’s menu is a masterclass in balance—quality ingredients treated with expert precision. We started with the steak tartare: silky, richly flavoured, each bite kissed by the velvet touch of quail egg yolk. The seasoning was spot on, letting the meat’s freshness take centre stage, while delicate umami notes played in the background. Every piece is uniformly chopped—clean, harmonious, and entirely free of sinew.
The scallops arrived still cradled in their shells, sweet and tender with just a whisper of the sea. Seafood this pristine requires restraint, and Maya delivers, letting the scallops shine in their purest form—no overworked garnishes, just honest, simple perfection.

For the main event: rib-eye steak, perfectly charred. Each bite carried a soft hint of smoke, the fat rendered with precision, every mouthful rich yet refined. Paired with a creamy peppercorn sauce, it felt indulgent but never heavy. Alongside, the black squid ink risotto was a showstopper. Inky black, bold in flavour, with tender squid rings nestled on top. The al dente rice was as deep in umami as it was in the sea’s briny essence—a dish that felt daring yet effortless.
Desserts kept the tempo of indulgence but with a subtle touch. It’s a menu that knows when to push and when to pull back—a balance the team have down to an art. We came to dinner with our dancing shoes firmly on and so, and as the final course approached, we opted to forgo dessert—our night was set to continue downstairs at The Pump Room.
Shaun Moffat, recently named ‘Manchester Chef of the Year’, has officially joined MAYA as our new Head Chef too. Known for his modern twist on British classics and creative use of seasonal ingredients, Shaun’s new menu is now on featuring elevated bistro favorites, indulgent Sunday Roasts, and hearty winter dishes.

The Service – Knowledgeable and Warm
The staff at Maya are eager to engage, not just in the formalities of ordering but in sharing the story of the restaurant, the provenance of the ingredients, and the passion behind each dish. They’re keen to recommend, but never pushy, and it’s clear they take pride in the daily specials, which reflect the restaurant’s commitment to seasonality.

A Complete Evening
Maya is far more than a dinner destination; it’s a full-fledged evening. With an interior that invites you to linger, a menu that excites, and a downstairs bar that tempts you to stay into the night, it encourages a slow unravelling of time, one cocktail, one course, one dance at a time. For those seeking more than just a meal, Maya is an experience not to be missed.
