With its genesis firmly rooted in Mediterranean living and cuisine, CAVO London is a celebration of everything sea and earth, taking over the 4th floor of the new Outernet building.
CAVO’s unrivalled open-plan interiors have been developed by a team of global designers from Italy, Spain and the UK who have worked to recreate the look and feel of everything the Mediterranean has to offer. The outside terrace will open in April and is set to be one of London’s most glamorous dining locations for 2023.

Where is CAVO London?
Outernet is a new building next to Tottenham Court Road station designed to immerse you in art and music through creative LED installations. Expect giant Ultra HD screens capable of delivering the most jaw-dropping audio-visual experiences in the world. There is also a 2000-capacity state-of-the-art live music venue as well as further music and retail spaces spread throughout Outernet.

The inspiration behind CAVO London
Following the successful launch of hospitality concepts in Greece and Spain, London has been chosen as the next destination for founder Ivo Dimitrov who has set his sights on the capital for his next and biggest venture.
Head Chef Alberto Gargiulo oversees the menus that span the whole of the Mediterranean. Alberto Gargiulo grew up in Naples, where food is a cultural phenomenon and home to some of the best ingredients and dishes the Mediterranean has to offer.

The food
Start with the Mediterranean Odyssey menu of small plates, with a range of delectable dishes to choose from, including signature seared Scallops in Champagne, garlic, chilli, and parsley butter; Zuppa Di Cozze (mussels, octopus, red prawns, freselia), and Tagliolini Al Tartufo Piemonte, made with 36-month aged Parmesan.
Other delights to start include Chiperones (baby fried squid with aioli); Al-Badhenjan Al-Mahmas (slow roasted aubergine, feta mousse, harissa, pomegranate); and Lasagna Crocante (wild forest mushroom & spinach lasagne, with 36-month dry aged parmesan cream.
Moving on to mains, you can mix and match, choosing from The Mediterranean Seafood Celebration made up of fresh oysters, seasonal seafood platters, fish and crustaceans. Or opt for the authentic Mediterranean barbeque experience and have your preferred cuts of meat expertly grilled on Josper Spanish coals.

Taste of Cavo Menu
The tasting menu is a great way to experience the best of CAVO London and comes with a selection of snacks, starters, tapas dishes, larger plates and sides. Taste the sea by starting with oysters, spicy mussels in a choux bun, and baccala with crispy sourdough. The plates continue with pan-fried scallops with a champagne butter emulsion; tagliolini with 36-month-aged parmesan; red snapper tartare; barbecued Iberian pork; and grilled lobster tail. The Josper oven at CAVO London uses carefully selected Spanish coals, adding a depth of rich flavours to every dish and the Pluma Iberico was so tender and tasty, sitting on a bed of buttery mash.
Their seasonal side dishes are Greek chips and pan-fried puntarelle. What was simply described as Greek chips are perhaps some of the finest fried potatoes we have had in years. Wafer thin slices of potato are delicately fried to give that crispiness and texture, seasoned with some Greek herbs. So simple yet so brilliant.

Brunch Odyssey
In true style, the Mediterranean CAVO is offering their wide-ranging four-course brunch menus, which can also be enjoyed on the outside terrace too. Diners will be greeted with a glass of champagne or the Cavo Bloody Mary on arrival, accompanied by oysters, followed by a choice of delicious dishes, including CAVO’s octopus served with lobster-infused aioli and baby cress and the Andalusian slow roast leg of lamb with potatoes and thyme.
For the sweet-toothed, the Basque cheesecake is served with a mixed berry chutney. If you are looking for a Vegan alternative, a four-course menu is also available, with starters including the Padron pepper stuffed with herbs, breadcrumbs and tomatoes, a selection of mixed vegetables in a romesco sauce and much more.

Grappa Martini
Drinks
A succinct selection of classic cocktails with extra Mediterranean flair is a focus on the CAVO drinks list. The Aegean Negroni is Cavo’s twist on the classic Negroni, using Raki from Greece and served with oregano oil, or try the Mediterranean Mary (Tomato gazpacho, balsamic, cucumber, oregano, anchovy, olive with added depth from Palo Cortado sherry). Our favourite was something we rarely see – a Grappa Martini. Grappa can be overpowering but this martini was delicate, balanced and herbaceous with Nonino Grappa Lo Chardonnay, vermouth, olive brine and a little hint of rosemary. Champagnes and a cherry-picked list of wines sourced from around The Med are also available.
