Beverly Hills staple Spago will host a four-day takeover at CUT at 45 Park Lane, serving the classic Spago menu for lunch and dinner. From 30 March 2023, Londoners will have the chance to experience a taste of Spago London, Wolfgang Puck’s award-winning flagship restaurant. Wolfgang Puck will also be in London during this pop up so you may even meet the man himself!
Spago is Wolfgang Puck’s first restaurant, opening in 1982 in West Hollywood. In 1997, the restaurant relocated to Canon Drive in Beverly Hills, where it gained its award-winning reputation. Since Space’s wild success among the Los Angeles crowd, Wolfgang built his reputation as one of the world’s most successful restaurant entrepreneurs and television personalities.

Elliott Grover
CUT at 45 Park Lane was Wolfgang’s first restaurant in Europe, so this collaboration marks a special moment in his career. With its opening in 2011, Wolfgang made his European debut with this modern American steak restaurant. Executive chef Elliot Grover joined in April 2022 and has led his team to offer exclusive events, delicious food, and an extensive wine collection.
What about the food?
Executive Chefs Tetsu Yahagi of Spago and Elliot Grover of 45 Park Lane will collaborate to bring a unique menu to Mayfair. The menus will include international specialities as well as Spago’s signature Californian cuisine. Menu highlights include Wolfgang’s favourite chicken bouillon, braised Austin beef goulash, and whole-roasted Chinese duck with steamed bao buns and fruit compote. Spago signature dishes to look out for include the smoked salmon pizza, stir-fried black pepper lobster, and bincho-grilled tandoori quail.

CUT at 45 Park Lane’s executive chef Elliott Grover said: “It is such an honour to be working alongside Tetsu Yahagi and Wolfgang Puck on this exciting take-over. I think the dishes we have chosen are really special in that they not only give guests the chance to experience Spago in the UK but they are still aligned with the culinary direction I have taken CUT in the past few months.”
