One of Mayfair’s most celebrated neighbourhood restaurants has just made a very exciting move. Silva, the modern Mediterranean restaurant tucked away on Bruton Place, has appointed Charlie Dilworth as its new Head Chef, marking a vibrant new chapter as it celebrates its first anniversary.

A Chef With Serious Credentials
At just 29 years old, Charlie Dilworth brings a career that punches well above his age. Kent-born and deeply rooted in seasonal, produce-led cooking, Charlie most recently held the position of Senior Sous Chef at Lita in Marylebone, the Michelin-starred restaurant that has become one of London’s most talked-about tables. Before that, his CV reads as a masterclass in refined British and European cooking, with stints at Boys Hall in Ashford as Head Chef, The Good Shed in Canterbury, and both The Radnor Arms and Rocksalt in Folkestone under the direction of celebrated chef Mark Sargeant.
It is exactly this combination of classical training, creative ambition and a genuine affinity for Silva’s ethos that made him the standout choice for the role. Owner Daria Grebenyuk has spoken warmly of how naturally Charlie has embraced the restaurant’s modern Mediterranean style, bringing fresh perspective, enthusiasm and considerable skill to the kitchen from day one.

A Menu That Celebrates the Season
Launching on 28 April, Charlie’s debut menu is a love letter to bold flavour, rich ingredients and visual elegance. Alongside a new a la carte selection, guests will be able to enjoy a set lunch (two courses at £29 per person) and an expanded weekend brunch offering.
Beloved Silva signatures are not going anywhere. The Cornish crab raviolo with langoustine sauce, the crispy fried egg with girolles and Parmesan sauce, and the iconic Basque cheesecake will all remain on the menu, testament to the dishes that have already won the restaurant a loyal following.
The new additions are where Charlie’s vision really shines. Standout dishes include white asparagus with cacio e pepe sauce, olive and preserved lemon; diced beef fillet with quail’s egg, tarragon and pickled mustard seeds; native lobster with carrot, smoked garlic, cucumber and bisque; braised ox cheek ragu with mafaldine and 24-month aged Parmesan; and halibut with Orkney scallop, whipped ratte, grapes and chicken butter sauce. Each dish reflects a chef who cares deeply about sourcing, consistency and delivering an experience that keeps guests coming back.

A Sweet New Addition
Joining Charlie in the kitchen is new Pastry Chef Phoebe Elsam, whose credentials are nothing short of impressive. Having worked at One Club Row, Harrods’ The Georgian Restaurant, 45 Park Lane and the legendary Scott’s of Mayfair, Phoebe will be unveiling a brand new dessert menu from late April, adding yet another reason to secure a table.

Silva is located at 26-28 Bruton Place, London W1J 6NG. The restaurant is open Tuesday to Friday for lunch (12pm to 3pm) and dinner (6pm to 9.45pm), with Saturday and Sunday brunch running from 11am to 3pm and dinner service on Saturday evenings. The ground floor seats up to 45 guests, with four al fresco tables on Bruton Place for warmer days. The beautifully designed interior, created by Atelier Wren, features mixed woods, marble and decorative foliage, and there are three private dining spaces on the first floor for special occasions.
