The perfect wine pairing is such an important part of a dining experience so it is always best to leave it in the hands of experts. This is why we are delighted that on 27 November 2019, Director of Wines Frederic Marti will be hosting an exclusive four course Burgundy wine dinner in the private room at CUT at 45 Park Lane.
What can you expect? In collaboration with executive chef David McIntyre, the evening will be a celebration of Burgundy and will start with a selection of canapés with your first Burgundy wine. At dinner you will then be taken on a journey through Burgundy, pairing a selection of top wines with a specially created four-course tasting menu.
Why Burgundy? One of the most romanticised wine regions, winemaking heritages stretch back 2000 years and over centuries Burgundy has become known for being the best wine land on earth. The terroir and soils are the secret behind that complex zesty minerality which has become one of the hallmarks of Burgundy wine. It also happens to be Frederic’s favourite region!
We spoke to Frederic recently and he was telling us that for the last 20 years, Burgundy has produced some of the most expensive bottles of wine in the world, reaching prices as high as £25,000 for a case of six bottles. But as soon as you dig a little more into the region and into the more artisanal side of their wine production, you are able to discover some delicious unique wines from various vintages at more amicable prices.
What about the food? Food and wine react so differently to each other so finding the right combination transforms a dinner. They key is to pair great with great so expect imaginative pairings with supreme quality wines that contrast as well as mirror flavours of the food.
The menu on 27 November will feature the freshest and most seasonal ingredients and some example dishes you could expect on the night include: Hamachi sashimi with baby vegetables and orange ponzu and a Gressingham duck breast with foie gras and Chantrelle mushrooms.
