Scarfes Bar has unveiled a new cocktail menu, “From Scratch.” With live jazz music setting the tone, you are transported to a world of sophistication and intimacy, where every moment is a celebration of the art of living. Inspired by the atmosphere of a drawing room and the sophistication of a private members club, you are surrounded by a roaring fire, a collection of cosy velvet armchairs and shelves filled with over 1,000 antique books.

The talented team behind the menu
The team at Scarfes Bar are super talented and extremely passionate. If there was a Michelin star for mixology, this bar team would be in the running. There is a tremendous sense of togetherness which comes through in the mixology. Kris Bazys is the kind of Bar Manager that everyone looks up to. He is inspirational, logical and so supportive of the team. For Kris, it is all about the atmosphere that is created for guests at the bar. There is that magical moment where the band are playing, people are singing along and everyone is thoroughly immersed in the creative, artistic and luxurious feel of Scarfes Bar. We also met bartender Marco Maiorano who talked us through the new creations and the inspiration behind each one.
Having recently celebrated their tenth anniversary and being awarded No.41 on the list of The World’s 50 Best Bars 2023 in Singapore, Scarfes Bar has recently launched ‘From Scratch.’ With this new menu, Scarfes is reinventing timeless classics and infusing them with their signature flair. The new menu also incorporates the mixologists’ own homemade cordials, ferments, and distillates, which they create in their laboratory.

Reinventing Classics
Tropical flavours get to shine in cocktails like ‘Tropicaldi,’ a playful twist on the classic Garibaldi, where Campari is fused with fluffy orange, pineapple, and strawberries, resulting in a vibrant, Barbie-pink cocktail, topped off with house-made strawberry leather. Equally tantalising is the ‘Figgy Star,’ featuring Renais gin with banana, fig, Mio Saké, and a hint of cardamom, creating a harmonious blend of sweet and savoury notes.
Savoury flavours get their chance to shine with the ‘Garden Gibson’, a mix of Grey Goose, Noilly Prat, Cubeb Pepper, apple, and pickles, garnished with homemade pickled onion. Take a bite of that pickled onion then sip the cocktail to see how the flavour profile changes with each sip. Meanwhile, the ‘Smoky Maria’ is a tribute to a Bloody Mary with its mix of Patron Silver, Tio Pepe, Marmite, smoked clamato, crowned with a delicate caper olive leaf.

Agave aficionados are in for a treat with cocktails like the ‘Rosa Paloma,’ a blend of Komos Rosa, fig leaf, Palo Cortado, and London Essence Pink Grapefruit Soda, garnished with lychee. And for those who are looking for a spicy kick, the ‘Lost Marguerite’ delivers with a mix of Lost Explorer Espadin, Grand Marnier, hot mango, and kaffir lime, garnished with a slice of fresh pineapple sprinkled with Espelette Pepper.
Scarfes relies on its extensive whisky cabinet to create gems such as the ‘Knock on Wood’, a blend of The Macallan 12, cedarwood, acorn and Martini Ambrato, garnished with eucalyptus. Whisky aficionados will also be pleased with selections like the ‘Pear Highball’, which is a lighter and longer serve, with The Glen Grant 12, clarified pear, muscat wine, Co2 garnished with a dot of blackcurrant jelly and a pear chip made in-house.
Scarfes Bar is also revisiting beloved classics, like ‘White Lady’, created in 1919 in Ciro’s Club in London, and the ‘Ramos & Eve’, Scarfes’ own reimagining of the Ramos Gin Fizz, which was created in New Orleans in 1888. Each sip is a testament to the bar’s dedication to craftsmanship and creativity, inviting guests to embark on a voyage of discovery.

World Travels
Following their tenth anniversary celebrations world tour and being awarded #33 on the Top 50 Cocktail Bars 2024, the team plan on continuing their travels, and bringing the best mixology from around the world to London.
