Sibin Speakeasy, nestled within the Great Scotland Yard Hotel, and discreetly concealed behind a bookshelf, is a new gem of the London bar scene. Previously renowned for its 170-strong whisky collection, Sibin Speakeasy has recently undergone a transformation.
From Whiskey Bar to Fine Drinking Speakeasy
Sibin Speakeasy bids farewell to half of its whiskey collection, welcoming a new era of mixology. You can now explore an array of spirits, fine wines, champagne, and five newly crafted cocktails, accompanied by a selection of bar food. The transformation also accompanied by an offering of live music performances every Thursday and Friday evening too.
The revamp of this space has clearly been fuelled by great attention to detail and a desire to preserve a connection with history and with the Scottish Highlands, where many of the whiskies on offer at Sibin come from. (By the way, Sibin means illicit whiskey in Gaelic)
A Spirited Team
Under the guidance of bar manager Guilherme Vieira, the Sibin team have been hard at work. Though discreetly donning a tiny shamrock pin, subtly woven into their attire, they proudly uphold the legacy of Sibin’s allure, and the 80 most exclusive whiskies from the existing collection, which will remain a cherished part of Sibin’s identity. One of the five new cocktails also contains whiskey, paying homage to the bar’s whiskey roots.
Cocktail Alchemy
Sibin Speakeasy unveiled five new cocktails, each one a masterpiece. Among them, “The Shebeen” stands out as a clandestine concoction, cloaked in mystery. Crafted from elusive ingredients known only to bootleggers, it encapsulates the enigmatic essence of the city. Inspired by Síbíns, this rebellious libation celebrates clandestine revelry in a glass.
Another notable addition is the “Bootlegger,” blending Plantation Pineapple, Discarded Banana, Apple, Saffron, Cadello, and bitters. Equally captivating are offerings like the “6 O’Clock Swill,” marrying Tanqueray Ten, Yuzu, Camomile, and Vetiver Gris, alongside the “Nightcup,” a fusion of Tromba Anejo, Casamigos Mezcal, Elderflower, Pol Roger, Grapefruit, and Citrus. Our favourite? “The Clandestine“, bringing together spicy Casamigos Mezcal with bubbly Pol Roger and delicate elderflower and grapefruit. A must try.
While innovation flourishes, Sibin Speakeasy remains faithful to the timeless classics. The enduring allure of the “Old Fashioned,” blending Bulleit Bourbon, Sugar, and Bitters, continues to captivate. Also on offer is the iconic “Penicillin,” crafted from Johnnie Walker Black Label, Lagavulin 16, Citrus, Honey, and Ginger, as well as the distinguished “Sazerac,” melding Bulleit ’95’ Rye, Absinth, Sugar, and Bitters.
Culinary Offerings
In addition to its latest cocktail creations, Sibin has unveiled an enticing new food menu dubbed “Sharing Plates.” You can now complement the cocktail experience with a variety of delectable dishes designed for sharing. Options include succulent Prawns paired with Sweet Potato and Preserved Lemon atop a Tapioca Cracker, an assortment of Air-Dry Iberian Ham, Capicola, and Salami served with Homemade Sourdough and Pickle Chutney, as well as a tempting offering of Montgomery Cheddar and Baron Bigod accompanied by Homemade Sourdough and Pickle Chutney.

Síbín transcends the traditional gentlemen’s clubs, offering a contemporary space where guests can unwind and enjoy great company without the intrusion of phones. A playful twist on classical interiors, the space features collectible spirits display cabinets, a centrally located bar, and an intriguing array of 1,903 empty bottles suspended from above. This work of patience and care produces a light and fluffy feeling, a gentle glass cloud sheltering you from the world outside those four walls, allowing you to leave all your worries behind and fully enjoy the experience Sibin has to offer.
